Guacamole
Ingredients
1 avocado
1 large tomato
1 small onion
1 tablespoon parsley
1 tablespoon of olive oil
House Cahrdonnay Vinegar
Madeira
Salt to taste
Red pepper to taste
Preparing
Chop the seedless tomatoes, onion and parsley into very small pieces and mix everything together, seasoning with vinegar and salt. Set aside. Then mash the avocado with the olive oil and add the reserved mixture. If desired, add red pepper to taste. At this point, taste and adjust the salt. Pour into the serving dish and refrigerate, covered. Use as an accompaniment to a good roast loin or as a pâté that can be served with toast, nachos or potato chips.
