Caprese Spaghetti
Ingredients
1 large onion
4 cloves of garlic
3 ripe tomatoes without seeds
500g tomato passata
Casa Madeira Freeze-dried Basil
200g spaghetti
Water
Salt
Pepper to taste
Buffalo mozzarella
Preparing
In a saucepan, add water and, as soon as it boils, salt. In another pan, add the onion cut into small cubes and sauté with olive oil. Add the sliced garlic and let it sauté too. Add the diced tomatoes and sauté. Season with salt and add the tomato paste. Season with black pepper and olive oil.
In the pot of boiling water, add the spaghetti and let it cook for the time indicated on the package. In a bowl, add the olive oil and the freeze-dried basil, this is the process of rehydrating the seasoning. Then add the pasta to the sauce and stir.
On the plate, place the spaghetti, the buffalo mozzarella and top with the freeze-dried basil that has been hydrated in olive oil. Finish with black pepper.
