Ravioli With Gastronomic Wine Sauce
Ingredients
Ravioli
3 ½ cups wheat flour
6 eggs
1 tablespoon olive oil
1 teaspoon salt
Sauce
1 small onion, chopped
2 tablespoons of olive oil
1 can of peeled tomatoes
2 crushed garlic cloves
2 tablespoons chopped fresh basil
¼ teaspoon chopped chili pepper
120ml Casa Madeira Gastronomic Wine
Preparing
Ravioli
Place the flour on a table and make a hole in the center. Add the salt and eggs to the hole. Mix the eggs with a fork and carefully incorporate the flour. Knead the dough for 5 minutes. Transfer to a bowl greased with olive oil and leave to rest for 15 minutes. Cut the dough into 4 pieces. Roll out to a thickness of 1.5 cm. Cut the dough and use the filling of your choice (ricotta or meat go very well together). Place the ravioli in a pan of boiling water and remove as soon as they rise.
Sauce
Put the olive oil in a pan and brown the onion and garlic over a low heat. Add the tomato sauce, Gastronomic Wine and pepper. Let the sauce cook over low heat, stirring constantly, until it thickens. Turn off and finish with salt and basil.
