Fillet Cubes in Gastronomic Wine Sauce

Ingredients

400g filet mignon

Salt

Black peppercorns

Olive oil

Butter

1 sprig of thyme

1 clove of garlic

1 onion

1/2 leek

1 small carrot

80g shitake

500ml Casa Madeira Gastronomic Wine

Preparing

Cut the meat into large cubes. Season with salt and pepper and set aside. In a pan, add butter, garlic, thyme and a little olive oil. Gradually sear the meat cubes. Once seared, set aside. Add the onion, carrot and leek, cut into large cubes.

Once the vegetables are sautéed, add 500ml of Casa Madeira Gastronomic Wine. Let the wine reduce by half. When it has reduced, pass the sauce through a sieve and discard the vegetables.

Put the butter and the halved mushrooms in a pan. Once the mushrooms are browned, add the sauce and the meat to finish cooking.
